Tel que nous l&rsquo;avons explor\u00e9 \u00e0 travers les <a href=\"https:\/\/herbasimple.com\/blog\/5-utilisations-medicinales-de-lail\/\" target=\"_blank\" rel=\"noreferrer noopener\">5 utilisations m\u00e9dicinales de l&rsquo;ail<\/a>, cette plante commune est un alli\u00e9 incontestable pour la pr\u00e9vention des maladies cardiovasculaires et m\u00e9taboliques. Dans cet article, nous explorerons plus en profondeur la phytochimie et extraction de l&rsquo;ail qui permettent de lib\u00e9rer ses bienfaits pour la sant\u00e9.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Culture de l&rsquo;ail au jardin<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">La plupart de l&rsquo;ail consomm\u00e9 est l&rsquo;ail cultiv\u00e9, de son nom latin <em>Allium sativum<\/em>. On le cultive partout \u00e0 travers le monde et dans diff\u00e9rents types de sols. Il y a une multitude de cultivars, je ne saurais tous les nommer tellement ils sont nombreux. Certains produisent des tiges florales rigides et d&rsquo;autres sont tendres. Il y a des petites sp\u00e9cificit\u00e9s pour les p\u00e9riodes de plantation et de r\u00e9colte pour chacun des cultivars.  Malgr\u00e9 leurs diff\u00e9rences au niveau de l&rsquo;apparence, ils ont tous le m\u00eame profil phytochimique et sont \u00e9quivalents au niveau m\u00e9dicinal.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Dans mon jardin, je cultive une vari\u00e9t\u00e9 \u00e0 tige rigide et les bulbes pr\u00e9sentent une l\u00e9g\u00e8re coloration ros\u00e9e. Les cultivars pr\u00e9cis demeurent incertains, car j&rsquo;ai acquis ces bulbes aupr\u00e8s de divers march\u00e9s fermiers. Sous le climat rigoureux du Qu\u00e9bec, je plante ces bulbes en octobre, juste avant l&rsquo;arriv\u00e9e des premi\u00e8res neiges (sinon, je prie pour une fonte expr\u00e8s \ud83d\ude2e avant l&rsquo;hiver). Je proc\u00e8de \u00e0 la r\u00e9colte des hampes florales une fois qu&rsquo;elles ont fait deux cercles, g\u00e9n\u00e9ralement vers la fin de juin. Les ca\u00efeux, quant \u00e0 eux, sont r\u00e9colt\u00e9s environ 6 semaines plus tard, vers la mi-ao\u00fbt.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Diff\u00e9rentes esp\u00e8ces d&rsquo;ail<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Il y a d&rsquo;autres esp\u00e8ces d&rsquo;ail ornementales et indig\u00e8nes (autres que <em>Allium sativum<\/em>). <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Je pense \u00e0 l&rsquo;ail des bois d&rsquo;Am\u00e9rique (<em>Allium tricoccum<\/em>), une esp\u00e8ce prot\u00e9g\u00e9e au Qu\u00e9bec. Celui-ci a un go\u00fbt diff\u00e9rent de l&rsquo;ail cultiv\u00e9, son ar\u00f4me est plus piquante. Sa chimie est un m\u00e9lange entre la composition de l&rsquo;ail et de l&rsquo;oignon. Il partage donc plusieurs propri\u00e9t\u00e9s m\u00e9dicinales avec l&rsquo;ail cultiv\u00e9.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">En Europe, il y a l&rsquo;ail des ours (<em>Allium ursinum<\/em>), parfois appel\u00e9 ail des bois ou ail sauvage. On consomme surtout la feuille dans son cas. Le profil phytochimique de cet ail a plusieurs points en commun avec l&rsquo;ail cultiv\u00e9 sauf que les proportions des principes actifs sont diff\u00e9rentes.  Les fa\u00e7ons de l&rsquo;appr\u00eater changent aussi car il est consomm\u00e9 frais.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Phytochimie de l&rsquo;ail cultiv\u00e9<\/strong><\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">La phytochimie de l&rsquo;ail a \u00e9t\u00e9 \u00e9tudi\u00e9e en d\u00e9tails mais elle est vraiment tr\u00e8s complexe. Toutefois, sa teneur en s\u00e9l\u00e9nium reste nettement inf\u00e9rieure \u00e0 celle des noix du Br\u00e9sil et des fruits de mer.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Vitamines dans l&rsquo;ail<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">L&rsquo;ail contient de la vitamine C (acide ascorbique) qui agit en synergie avec les autres principes actifs. Toutefois, la quantit\u00e9 n&rsquo;est pas suffisante pour un apport quotidien significatif. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1 gramme d\u2019ail s\u00e9ch\u00e9 fournit 1% de l\u2019apport quotidien en vitamine C<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Parmi les vitamines B, on note la pyridoxine (vitamine B<sub>6<\/sub>), l&rsquo;acide pantoth\u00e9nique (vitamine&nbsp;B<sub>5<\/sub>) et la thiamine (vitamine B<sub>1<\/sub>). Mais aussit\u00f4t que l&rsquo;on brise les tissus de la gousse, l&rsquo;<strong>enzyme alliinase<\/strong> est lib\u00e9r\u00e9e et engendre une s\u00e9rie de r\u00e9actions biochimiques. L&rsquo;odeur typique de l&rsquo;ail est alors lib\u00e9r\u00e9e !!! \ud83d\ude2e<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">La <strong>glutamyl-allylcyst\u00e9ine<\/strong> (ou gamma-L-glutamyl-S-allyl-L-cyst\u00e9ine de son nom complet) se transforme partiellement en <strong>alliine<\/strong> sous l&rsquo;action de l&rsquo;enzyme. Elle se lib\u00e8re en moins de 1 minute mais se transforme aussit\u00f4t en une multitude d&rsquo;autres mol\u00e9cules. Elle est particuli\u00e8rement antiseptique, antivirale et antifongique. D&rsquo;o\u00f9 son efficacit\u00e9 sur les <a href=\"https:\/\/herbasimple.com\/blog\/5-utilisations-medicinales-de-lail\/\" target=\"_blank\" rel=\"noreferrer noopener\">verrues<\/a> et les mycoses.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pour en profiter, on utilise l&rsquo;<strong>ail fraichement \u00e9cras\u00e9<\/strong> ! Mais attention, l&rsquo;allicine est caustique et peut br\u00fbler les tissus.<\/p>\n<\/div><\/div>\n\n\n\n<p class=\"wp-block-paragraph\"><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-vivid-cyan-blue-color\">Ensuite, c&rsquo;est l\u00e0 que \u00e7a se complique \ud83d\ude44 parce que la d\u00e9composition de l&rsquo;allicine produit une multitude de mol\u00e9cules et leur nature d\u00e9pend de la technique de pr\u00e9paration !<\/mark><\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Principes actifs dans l&rsquo;ail frais<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Une gousse d&rsquo;ail fra\u00eeche et enti\u00e8re contient entre 4 et 24 mg de glutamyl-allylcyst\u00e9ine et entre 12 \u00e0 56 mg d&rsquo;alliine. Et ce, pour une gousse de grosseur moyenne.&nbsp;Si on l&rsquo;\u00e9crase, elle produira entre 5 \u00e0 18 mg d&rsquo;allicine par gousse. En consommant l&rsquo;ail cru ou ajout\u00e9 aux aliments dans la derni\u00e8re minute de cuisson, on profite d&rsquo;un <strong>taux maximal en allicine<\/strong>. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">L&rsquo;ail frais a une forte action antimicrobienne utile pour soigner les infections digestives et respiratoires. L&rsquo;allicine est r\u00e9put\u00e9e pour augmenter le niveau sanguin de glutathion, aidant \u00e0 am\u00e9liorer la sensibilit\u00e9 \u00e0 l&rsquo;insuline et \u00e0 pr\u00e9venir plusieurs probl\u00e9matiques li\u00e9es au syndr\u00f4me m\u00e9tabolique. C&rsquo;est un aliment pour contrer les effets du vieillissement !   <\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Principes actifs dans l&rsquo;ail en poudre <\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">La poudre d&rsquo;ail est pr\u00e9par\u00e9e \u00e0 partir de gousses d&rsquo;ail qui ont \u00e9t\u00e9 s\u00e9ch\u00e9es \u00e0 basse temp\u00e9rature. Si les conditions de s\u00e9chage sont optimales, on conservera une bonne proportion de glutamyl-allylcyst\u00e9ine et d&rsquo;alliine. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Par contre, le probl\u00e8me arrive lors de l&rsquo;ingestion. L&rsquo;enzyme alliinase est compl\u00e8tement d\u00e9truite par le pH acide de l&rsquo;estomac alors l&rsquo;ingestion de la poudre s\u00e8che ne procure pas les effets m\u00e9dicinaux de l&rsquo;allicine. Pour que le produit \u00e0 base d&rsquo;ail en poudre produise les effets recherch\u00e9s de l&rsquo;allicine, la poudre doit \u00eatre contenue dans une <strong>capsule ent\u00e9rique<\/strong>.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Principes actifs dans l&rsquo;ail noir <\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">La pr\u00e9paration de l&rsquo;ail noir est un proc\u00e9d\u00e9 particulier qui sera discut\u00e9 en d\u00e9tails dans un autre article. L&rsquo;ail est expos\u00e9 \u00e0 une douce chaleur et \u00e0 l&rsquo;humidit\u00e9 pour produire une r\u00e9action de brunissement (r\u00e9action de Maillard). On en retrouve \u00e9galement dans l&rsquo;extrait huileux.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">L&rsquo;ajo\u00e8ne est hypotenseur, hypocholest\u00e9rol\u00e9miant, cardioprotecteur et antibact\u00e9rien.<\/p>\n<\/div><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">Extraction dans le vinaigre <\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">On peut pr\u00e9parer un vinaigre d&rsquo;ail selon la technique pr\u00e9sent\u00e9e <a href=\"https:\/\/herbasimple.com\/blog\/5-utilisations-medicinales-de-lail\/\" target=\"_blank\" rel=\"noreferrer noopener\">ici<\/a>. Il est important de laisser reposer l&rsquo;ail 60 secondes avant de la m\u00e9langer au vinaigre car <strong>le vinaigre va inhiber l&rsquo;alliinase<\/strong> ainsi que la production d&rsquo;allicine. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Dans le vinaigre ont extrait les m\u00eames principes actifs que dans l&rsquo;eau initialement. Mais avec le temps, l&rsquo;allicine se d\u00e9gradera pour former plusieurs compos\u00e9s hydrosolubles comme ceux que l&rsquo;on trouve dans l&rsquo;ail noir (allylcyst\u00e9ine).<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Extraction dans l&rsquo;alcool<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">On peut extraire l&rsquo;ail dans l&rsquo;alcool si on le d\u00e9sire, en utilisant un taux d&rsquo;\u00e9thanol entre 20 et 30%. On proc\u00e8de de la m\u00eame fa\u00e7on que pour le vinaigre. L&rsquo;alcool aura cependant le d\u00e9savantage de ne pas extraire l&rsquo;inuline et de diminuer l&rsquo;extraction des min\u00e9raux.
