On peut alors se questionner si<strong> c&rsquo;est vraiment n\u00e9cessaire de tremper la racine avant de la chauffer&#8230; <\/strong>\ud83e\udd14<\/li>\n\n\n\n<li>Tandis qu&rsquo;une fois filtr\u00e9e,<strong> <\/strong>la mac\u00e9ration froide ne contenant pas d\u2019amidon, le chauffage ne change pas la texture.<strong> <\/strong>Ce qui veut dire que<strong> 20 min ne d\u00e9truit pas les mucilages de la guimauve. <\/strong><\/li>\n\n\n\n<li>Par contre, <strong>si on chauffe 45 min, la texture se liqu\u00e9fie<\/strong> &#8211; les mucilages commencent alors \u00e0 se d\u00e9structurer.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">\ud83d\udd2c Ce que la litt\u00e9rature scientifique dit<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Certaines \u00e9tudes sur l\u2019extraction aqueuse des polysaccharides de la guimauve (<em>Althaea officinalis<\/em>) montrent que <strong>la temp\u00e9rature est un facteur majeur qui influence le rendement des mucilages<\/strong>.<br>Certaines optimisations d\u2019extraction sugg\u00e8rent que <strong>des temp\u00e9ratures autour de 60\u201370 \u00b0C<\/strong>, utilis\u00e9es pendant <strong>10 \u00e0 20 minutes<\/strong>, <strong>am\u00e9liorent la r\u00e9cup\u00e9ration des polysaccharides sans les d\u00e9grader<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">D&rsquo;ailleurs <\/p>\n\n\n\n<p class=\"has-medium-font-size wp-block-paragraph\"><strong>\ud83d\udc49 \u00c7a confirme mes observations : on extrait plus de mucilages \u00e0 chaud !<\/strong><\/p>\n\n\n\n<p class=\"has-black-color has-pale-ocean-gradient-background has-text-color has-background has-link-color wp-elements-2 wp-block-paragraph\">\ud83d\udca1 Fait int\u00e9ressant : Le point d\u2019\u00e9bullition de la pr\u00e9paration d\u00e9pend de sa concentration. <strong>Plus tu ajoutes de guimauve<\/strong>, <strong>plus le point d\u2019\u00e9bullition diminue<\/strong> \u2014 j\u2019ai mesur\u00e9 le premier fr\u00e9missement d\u00e8s <strong>70 \u00b0C<\/strong> dans ma d\u00e9coction. <\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Alors\u2026 faut-il chauffer la guimauve ou non ? \ud83d\ude0f<\/h2>\n\n\n\n<p class=\"has-black-color has-pale-ocean-gradient-background has-text-color has-background has-link-color has-medium-font-size wp-elements-3 wp-block-paragraph\">Oui, <strong>on peut chauffer les mucilages<\/strong> \u2014<br>mais pas trop longtemps, <strong>10-20 minutes est optimal<\/strong> ! \ud83d\ude05\ud83d\udd25<\/p>\n\n\n\n<p class=\"has-black-color has-pale-ocean-gradient-background has-text-color has-background has-link-color has-medium-font-size wp-elements-4 wp-block-paragraph\">\ud83c\udf3f En pratique, la chaleur favorise \u00e9galement l&rsquo;extraction d&rsquo;autres principes actifs de la guimauve.
